Ingredients:
• 1 (15.25 ox) box of classic yellow cake mix • 2 1/2 tsp pumpkin spice seasoning • 1 (15 oz) can of pumpkin puree Directions: 1. Preheat the oven to 350 degrees Fahrenheit. 2. Mix the cake mix with the pumpkin spice seasoning. 3. Add the pumpkin puree and mix well. If there are a few clumps of mix left, that is fine. It will be a thick cake like texture and that is what you want. 4. Use 2 Tbsp scoop or a cookie scoop and place the cookie dollops onto a baking sheet. Bake for 10-12 minutes. 5. Remove from cookie sheet and let cool for about 10 minutes. Notes: * The pumpkin spice seasoning I use is the one that I made. You can access the seasoning recipe here: pumpkin-spice-seasoning.html. * I have previously made this recipe with Spiced Cake Mix and added more pumpkin spice seasoning to it. Doing it this way helps you control how much spiced flavour you prefer. * When making these, I use a silicone baking mat to help prevent the cookies from sticking to the pan. You will want to prep your pan if you do not use one of these. * These cookies store good in an air tight container. They are still light and fluffy the following day(s) if you have any left over.
