My name is Brittney Michelle. My family and my older friends call me Brittney. My newer friends call me Michelle because I prefer Michelle rather than my first name.
I have been vegan since July of 2018. I had been wanting to be vegan several years before then. Although, growing up in Bible Belt Mississippi and being young and not able to support yourself, it complicates things. After I joined the Air Force, I was even more fascinated by it. Even though I made it through the trials and tribulations that life threw my way, I did not make it through the Air Force. That's okay though, because at least I tried. I don't regret joining or anything I went through; you just gotta "grow thru what u go thru". You can thank Mod Sun for that phrase.. ♥
Through my struggles and victories in life, I finally figured out what I wanted to do and so I acted upon it. I told my mom that I was going to cut out animal products slowly and to make sure she didn’t buy extra animal products for me anymore.
There are many reasons why I became vegan. One reason, I love animals. I am actively doing something to make a difference with it now as well. Another reason is for the environment. You wouldn’t believe how much the Earth is suffering because of animal agriculture. Of course there are many reasons why the Earth is struggling, but animal agriculture is by far the biggest contributing factor. And the third reason, for my health. I didn’t make it through basic training because I was collapsing and having anxiety/heart attack type symptoms but no one could figure out what was wrong with me. Since being out in the civilian world again, my current doctor actually has helped me out quite a bit. We have gotten a few tests done for myself, and even though a few things have come back negative, we are still trying to figure out what is actually wrong with me. So there’s that factor. Also, many health problems run through my family. So I want to be the best version of myself that I can be; that includes my diet and lifestyle. Changing my diet/lifestyle will help me accomplish that.
Since being vegan, I dropped a lot of weight in a decent amount of time, and kept a steady weight since then. My skin has cleared up more. I sleep and wake up a bit better. I even feel better during the day. Of course I’m human, so I’m not perfect. But little progress is still progress.
My outlook on life has changed for the better as well. My eyes have been opened to what goes on behind closed doors and I am grateful to know that now. Once you know the truth, you can’t un-see it. It’s not possible. With that being said, people still turn a blind eye to it or they follow social standards rather than doing what is ethically good. At the end of the day though, we as humans have the right to choose what we want to do or not do. That includes our actions and what we support and/or don't support.
Anyway, hopefully sharing a small piece of my story with you guys will pique your interest even a slight bit. I only hope that you guys are interested in trying the recipes I plan to put out here on my blog.
I do know some Omnivores that love some of these recipes. I hope you guys enjoy these recipes as well, whether you keep them as is or if you alter them to your own liking.
Side note: I changed the name of my blog from The Vegan Hippy to The Minimal Vegan. I still feel like I have the old/hippy soul but I have slowly became a minimalist. I also feel like it suits my aesthetic for my website so much better.
